Check out this new freeware/shareware modeller called MilkShape3D. It could be that you already have a really great, expensive modeller but if not check this one out. It exports very low poly (but nice looking) models in Quake, Unreal (and UT), and Genesis3D files.

I don''t have the URL but just do a search.

Oh yeah and Loony Games as well. It's owner, Paul 'Villam' Steed, works with ID so he doesn't get much time to work on it (nothing for a few months now) But the old posts are x-l-ent. Start at 1.1 and work through.

last I heard paul steed just writes for www.loonygames.com
but how would I know, loonygames hasn''t updated in years

main thing is, loonygames has the best tutorials for general modeling techniques, real great explenations of the importance of edge turn, animation basics and maybe some 3DS MAX to boot... if you look for them.
another good site for tutorials is http://www.planethalflife.com/coldfusion/
I believe the tutorila section is what you want.
And of corse the all mighty milkshape 3D (tought me modeling!) is at
http://www.swissquake.com/chumbalum-soft/
and they have a damn fine tutorial section if you need it
